Threw together some bruschetta for Thanksmas this year, a simple, classic recipe:
2 Large Heirloom tomatoes
Fresh Basil (to taste)
Fresh Mozzarella cheese
Fresh ground pepper
Kosher salt
Extra Virgin Olive Oil
Aged Balsamic vinegar
Diced peaches
French Baguette
Dice tomatoes, chop basil and put into bowl. Season to taste, add vinegar, olive oil, and a small amount of peaches (I would say the proportion would be about 8:1) and mix. Set aside to soak.
Slice bread and mozzarella and place on a tray with mozzarella on top. Season with salt and pepper and olive oil, put in oven at 350 until cheese melts or at least gets soft.
Spoon tomato mixture on top and serve!
